Only the soft, mature parts of Taiwanese Machiku bamboo shoots are cut and seasoned with Momoya's unique blend of soy sauce, sugar, and sesame oil, making them a great topping for ramen, as well as a great side dish for rice or as a snack.
The bamboo shoots used as raw material are sourced from a region of Taiwan known as the "deep mountains," which is located at an altitude of over 400m.
The reason for using bamboo shoots from this region is that the "miyama" areas are not exposed to excessive sunlight, and the bamboo shoot fibers are soft and easy to bite through.
We discard all the hard parts of the bamboo shoot nodes and use only the soft parts, which have been put through processes such as lactic acid fermentation, aging, and sun drying to concentrate the flavor.
