Oita Prefecture is the number one producer of dried shiitake mushrooms in Japan. We use a generous amount of donko shiitake mushrooms from the Kunisaki Peninsula, which are of superior quality. Our dashi stock is made without any additives and boasts a natural umami flavor. Our noodles are made from 100% domestically produced Hokkaido wheat.
