This soy sauce is made with shiitake mushrooms from Oita Prefecture and features a mellow flavor and a strong dashi stock.

We have added konbu root from Hokkaido and shiitake mushrooms from Oita to our long-term naturally aged honjozo soy sauce. Konbu root is rich in alginic acid, amino acids, iodine, and minerals, and helps regulate cholesterol and salt in the body. You can use it as a soy sauce to pour over sashimi and pickles, or in hot pots and simmered dishes.
