This dashi stock is made with powdered kelp from southern Hokkaido and Hidaka, and has a mellow flavor that brings out the natural flavor of the ingredients. It will bring out the best in dishes such as clear soups and simmered dishes. Simply put cucumber and kelp stock in a plastic bag, lightly knead, soak for about 10 minutes, and drain to easily make delicious lightly pickled vegetables.
